Chicken Masala Recipe
Ingredients

For the Chicken:
- 500g chicken (bone-in or boneless, cut into pieces)
- 2 tablespoons oil (vegetable or ghee)
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 1 tablespoon ginger-garlic paste
- 2-3 green chilies, slit (adjust to taste)
- Fresh cilantro, for garnish

Spices:
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- ½ teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- Salt, to taste
Instructions

Heat Oil: In a large pan or skillet, heat the oil over medium heat. Add cumin seeds and let them splutter.

Sauté Onions: Add the chopped onions and sauté until they turn golden brown.

Add Ginger-Garlic: Stir in the ginger-garlic paste and green chilies. Cook for about 1-2 minutes until fragrant.

Add Tomatoes: Pour in the tomato puree and cook until the oil starts to separate from the mixture, about 5-7 minutes.

Spice It Up: Add the turmeric, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes.

Add Chicken: Add the chicken pieces to the pan. Stir to coat the chicken with the spice mixture.

Cook Chicken: Cover the pan and cook on low heat for about 20-25 minutes, stirring occasionally, until the chicken is cooked through and tender. You can add a splash of water if it gets too dry.

Finish with Garam Masala: Once the chicken is cooked, sprinkle garam masala on top and mix well. Cook for an additional 2-3 minutes.

Garnish: Remove from heat and garnish with fresh cilantro.
