Mom's Favorite Mac-N-Cheese - Bargains R Ours

Mom's Favorite Mac-N-Cheese

Ingredients:

  • 8 oz your favorite pasta noodle (macaroni, elbow, spiral, shell, ect.) (about 2 cups)
  • 1 16 oz package of Velveeta
  • 1 cup shredded sharp cheddar cheese
  • 3 tablespoons butter
  • 1 tablespoon chicken bouillon
  • 1 cup finely chopped onion
  • 3 tablespoons all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1 teaspoon mustard powder (optional)
  • Salt and pepper to taste
  • 1 12oz package of pre-cooked polish kielbasa

Instructions:

  1. Cook the Pasta:
    • In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Make the Cheese Sauce:
    • Cut up the kielbasa into bite size pieces
    • In a medium saucepan, brown the kielbasa chunks then remove them and place them to the side for later. 
    • In the same pan add the chopped onions and melt the butter over medium heat, picking up the flavor bits left behind by the kielbasa.
    • Add in chicken bouillon  and work it into the butter and onion mixture
    • Whisk in the flour and cook for about 1 minute until it forms a paste (roux).
    • Gradually whisk in the milk, stirring constantly until the mixture thickens (about 5-7 minutes).
    • Stir in the mustard powder (if using), salt, and pepper.
    • Add the shredded cheddar and Velveeta cheese, stirring until melted and smooth.
  3. Combine:
    • Add the cooked macaroni and kielbasa chunks to the cheese sauce, stirring until well combined.
  4. Serve:
    • Let it cool for a few minutes before serving. Enjoy your homemade mac and cheese!
