Mom's Favorite Mac-N-Cheese
Ingredients:
- 8 oz your favorite pasta noodle (macaroni, elbow, spiral, shell, ect.) (about 2 cups)
- 1 16 oz package of Velveeta
- 1 cup shredded sharp cheddar cheese
- 3 tablespoons butter
- 1 tablespoon chicken bouillon
- 1 cup finely chopped onion
- 3 tablespoons all-purpose flour
- 2 cups milk (whole or 2%)
- 1 teaspoon mustard powder (optional)
- Salt and pepper to taste
- 1 12oz package of pre-cooked polish kielbasa
Instructions:
- Cook the Pasta:
- In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- Make the Cheese Sauce:
- Cut up the kielbasa into bite size pieces
- In a medium saucepan, brown the kielbasa chunks then remove them and place them to the side for later.
- In the same pan add the chopped onions and melt the butter over medium heat, picking up the flavor bits left behind by the kielbasa.
- Add in chicken bouillon and work it into the butter and onion mixture
- Whisk in the flour and cook for about 1 minute until it forms a paste (roux).
- Gradually whisk in the milk, stirring constantly until the mixture thickens (about 5-7 minutes).
- Stir in the mustard powder (if using), salt, and pepper.
- Add the shredded cheddar and Velveeta cheese, stirring until melted and smooth.
- Combine:
- Add the cooked macaroni and kielbasa chunks to the cheese sauce, stirring until well combined.
- Serve:
- Let it cool for a few minutes before serving. Enjoy your homemade mac and cheese!
